Title: Flavored Honey's

Yield: 1 Cup

16ozHoney (1 1/2 cups apx.)
  One of the following
1tbGrated grapefruit, lime,
  Lemon or organge peel *OR*
1/4cChopped fresh mint *OR*
1tbPeeled ginmger root in match
  Stick pieces *OR*
1tbWhole Allspice *OR*
1 1/2tsDried crushed red pepper

: In medium sized sauce-pan. mix honey and chosen ingredient. Heat mixture over low heat 10 minutes. For citrus, mint or ginger honey, let stand at least 2 hours. For Allspice honey, let stand overnight. For Hot pepper honey let stand 1 to 2 hours. : Strain and pour honey into 8-ounce jar. Cover with lid.
